PICNIC TREATS: AFGHAN BISCUITS WITH CHOCOLATE FUDGE ICING
These are the BEST chocolate cornflake biscuits getting around. Originating from New Zealand, this tasty recipe found its way into the kitchen of the late and much loved Grandma Picnic Season, and has been on regular rotation at family picnics ever since.
For the biscuits:
200g butter
60g caster sugar
1tsp vanilla
170 plain flour
2 tablespoons dutch cocoa
1 tsp baking powder
2 cups crushed cornflakes
For the choc fudge icing:
250g soft icing mixture
3 tbs dutch cocoa
4 tbs water
4 tbs caster sugar
4 tbs butter
Method:
Preheat oven to 175C
Cream butter and caster sugar, add vanilla.
Sift flour, baking powder and cocoa.
Crush cornflakes by hand and mix in dry ingredients all at once with a wooden spoon.
Form teaspoon sized balls of dough mixture and squash them slightly. Arrange 4cm apart on a baking paper lined tray.
Bake for 12-14 minutes, cool on tray.
For the choc fudge icing:
Boil water, caster sugar and butter together.
Simmer for 1 minute to form a syrup
Remove from heat, sift in icing sugar and cocoa
Once biscuits are completely cool, add a small dollop onto the top of each biscuit.
